One bowl chocolate brownies
These brownies are easy and quick to make, and you will only have one bowl to wash up!
It is not easy to cook elaborate meals or even large meals in a small kitchen. And sometimes space is not even the problem, I often just fancy a sweet recipe that will be quick and easy to make. I am often on the look out for one bowl recipes and this fudgy brownie one has quickly become a family favourite.
Dark chocolate is not always a staple in my cupboard – as much as I would like it to be – but I often come across offers in the supermarket. This is when i mistakenly did not read the label properly and bough 100% cocoa chocolate. Completely inedible, but a dream to cook with. That’s when I first tried this recipe.
I have tested this recipe many times and it is important to keep true to the fat ratio, so using chocolate that has 85% cocoa content is important. Another important aspect is the size of the baking pan, an inch off should be fine but a pan too much smaller than that will take longer to cook and make the brownies dry.
Let the brownie cool completely before taking out of the baking tin and portioning it. It can be warmed up again but I prefer it at room temperature as it becomes truly fudgy. Ice cream on top is a must.
One bowl chocolate brownies (serves 10-12)
200g 85% chocolate, chopped
200g butter
300g light brown sugar
2 eggs, lightly beaten
115g flour, sieved
1 tsp salt
Ice cream to serve
1. Preheat oven to 160C. Line a baking tin (9×11”) with parchment paper or foil
2. In a large heat proof bowl melt the butter and chocolate together by placing them in a microwave. Melt on high heat and stop and stir after 30 seconds. repeat until it is all melted. Let it cool for a couple of minutes
3. Whisk in the sugar until combined, then add eggs
3. With a spatula fold in the flour and salt into the mixture, until completely incorporated.
4. Bake for 20 minutes. Check with a toothpick in the centre of the brownie, it should comes with little crumbs stuck to it. Let it cool completely in baking tin before removing and cutting it.
